Pumpkin Chip Cookies - Take 2

Okay after fussing around a bit with the original recipe, as well as making several mistakes, I have decided this is the way to go. Enjoy!




Pumpkin Chip Cookies (makes 3 dozen)
8 oz canned pumpkin
1 tsp soda
2 tsp powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp cloves
2 C flour
1 C turbinado sugar
1 egg
1/2 C unsalted butter
1 tsp vanilla
6oz chocolate chips

Heat oven to 375 degrees.

Spray cookie sheets with nonstick spray or line them with parchment paper or silpats.

Cream butter and sugar (I do this for a few minutes to make sure it's gotten air whipped in and looks creamy). Add in eggs and vanilla. Add in pumpkin.

In another large bowl whisk together soda, powder, salt, spices, and flour. Gradually add dry ingredients to wet. Stir in chocolate chips. These are a very WET cookie and the dough is not similar to a chocolate chip or sugar cookie dough.

Drop by teaspoon onto cookie sheet and bake 14 minutes. They will feel very slightly soft to the touch when they are done. Remove them with a spatula and cool on wire racks.
